Recipe: Lemon Cake

It seems Mondays are a good day to do some baking. Last week I made some Russian Fudge and it proved to be quite popular among my friends, family and here on the blog. Check out what I made today! Recipe below. 

Yesterday I was given a bag of lemons, and when you are given lemons - you make Lemon Cake! Well I do. Originally, I was going to make a Lemon Slice because a friend of mine gave me a special recipe, however I was missing a couple of ingredients, so I decided to make a Lemon Cake instead. This recipe is really easy and the cake is moist, and oh-so delicious - a perfect treat to have with a nice, hot cup of tea. 

Ingredients
For the Cake
1 cup self-raising flour
1 tspn baking powder
1 pinch of salt
1 tspn vanilla essence
125ml butter (melted)
3/4 cup caster sugar
2 eggs
2 lemons (juice and rind)

For the Glaze
50ml butter
1/2 cup caster sugar
1 lemon juice (large)

Method

  1. Pre-heat the over to about 180oC
  2. Grease cake tin with baking paper and butter
  3. Sift all the dry ingredients together (flour, baking powder, and salt)
  4. In a separate bowl, mix butter and sugar then add eggs one at a time beating in between each egg. Together with the vanilla essence, add the lemon rind and lemon juice
  5. Add the dry ingredients a little bit at a time, to the wet mixture, beat each time
  6. Place mixture in cake tin and bake for about 45 min - 1 hour (depending on your oven)
  7. About 10 minutes before the cake comes out of the oven - melt the sugar, butter and lemon juice together and spoon lemon syrup over the hot cake
  8. Leave on a wire rack to cool

Recipe: Russian Fudge

Russian Fudge is one of Miss B's favourite treats, so we decided to make some of our own. I found this recipe created by Jo Seagar, shared on Chelsea Sugar. You will definitely want to bookmark this recipe...this Russian Fudge is creamy and oh-so delicious.

Ingredients

3 1/2 cups of Chelsea White Sugar
125g butter
3 Tbsp Chelsea Golden Syryp (tin)
1/2 cup milk
1/2 tsp salt
200g sweetened condensed milk (half a standard tin)
2 tsp vanilla essence



Method:
1. Place all the ingredients except the vanilla, into a medium-heavy saucepan. 
2. Warm over a gentle heat until the sugar has dissolved about 10-15 minutes. 
3. Bring to a gentle boil and cook for about 5-10 minutes, until it reaches the soft ball stage (120°C).
4. Remove from the heat and add the vanilla.
5. Beat until the fudge is creamy and thick and has lost its gloss.
6. Pour into a greased cake pan. Score the top and break into pieces when cold.

Recipe: Easy Chocolate Cupcakes

Easy Chocolate Cupcake Recipe

Ingredients: (Makes six cupcakes)
You will need:
1/2 cup butter
1/2 cup sugar (castor)
2 eggs
1 cup of Self-Raising Flour
2 teaspoons of cocoa powder
1 teaspoon of baking soda

Mix together butter and sugar. Add eggs.
Add flour, cocoa powder & baking soda  
Stir it all together
Spoon the mixture into muffin cups
Bake for 15-20 minutes or until knife/chopstick inserted into the cupcake comes out clean.

Leave to cool and then decorate!

Easy Icing Recipe

Ingredients: 
You will need: 
1 1/2 cup of icing sugar
1 tablespoon of butter
1-3 teaspoons of water/milk (note: milk will make it smooth)
1 drop of colouring

Method: 
Combine icing sugar & butter in a bowl. Once done, add milk a bit at a time until you get the consistency you want. Add colour & spread over your cupcake or cake. 


Once cooled, scoop out the middle of the cupcake (keeping the top) 

Add your favourite chocolate treats (M&Ms, Jaffas etc)

Put the top back on to hide your treats.
Ready for the icing!



Add your choice of sprinkles

Day 16: Christmas Word Search 
There are so many Christmas worksheets, including word searches/crosswords/mazes, available online. Find one that is age appropriate for your child and print. I still have my Christmas Activity Resource Box from when I was teaching - so I grabbed a couple of worksheets for Miss B to complete today! A nice activity for her to do while listening to some Christmas songs.

Day 17: Christmas Movie Night
Tonight on Disney Channel - A Christmas Carol featuring Jim Carrey. Perfect!

Day 18: Pic's Peanut Butter Rudolph Cookies
You will need: 
3/4 cup peanut butter (I've used Pic's Peanut Butter)
1 1/4 cup firmly packed brown sugar
1/2 cup shortening
3 tablespoons milk
1 tablespoon vanilla
1 egg
1 3/4 cup all-purpose flour
3/4 teaspoon baking soda
3/4 teaspoon salt
Pretzels 
Choc Drops
1 bag of Jaffas

Preheat oven to 180°C.
Makes up to 40 cookies.

Here's what you do:


In a medium-large bowl, combine peanut butter, brown sugar, shortening, vanilla & milk. Add egg and continue to mix until just blended.  

In a separate bowl, combine flour, baking soda and salt.

Add the above to the peanut butter mixture and mix until blended. 


Roll dough into a small ball (1-inch). To make reindeer-shape cookies, pinch the bottom of the ball to form a point, then gently flatten with your hand. As shown in photos. 



Place onto baking tray/sheet - bake for 7-8 minutes, until set or when they are beginning to brown.


Remove from oven and immediately (and gently) press two pretzels into the tops of the cookies for the reindeer's antlers. Press two choc drops in for the eyes and one red Jaffa for the nose (you can also use red M&Ms). They look Oh-So CUTE!


Allow to cool for 2 minutes on the baking sheet and then transfer to a wire rack to cool completely.
